The original manuscripts penned by the original authors, of course. :-)
Unfortunately, we don't have any of the originals, only copies. And the
copies, as you point out, have some minor variations. But I believe the
better original language texts we have today are very close to the
originals.

It might be a good idea to point out here that the number of existing
ancient manuscripts of the Bible are much more numerous and of greater
antiquity (closer in time to the originals) than the existing ancient texts
supporting other comparably ancient events. For example, there are ancient
New Testament texts that were made (copied from older copies or the
originals) only about 35 years after the actual events. But the oldest
copies (IIRC, there are only 9 in existence) of Caesar's Gallic Wars were
made some 900 years after the events. The number of existing ancient Bible
texts (particularly the NT) is overwhelming, thousands. You may be surprised
that there is more supporting evidence for any portion of the New Testament
than there is evidence that Julius Caesar even existed. The Greek versions
Chuck mentions above are complete Greek texts of the New Testament that have
been assembled by different individuals or groups through careful study of
many ancient source texts, and other assembled texts.
