But actually - what defines the size of the screen when using remote
desktop? Shouldn't the client be able to use two monitors?

Yes, but this is not the same. One thing is the real estate you can
overlook, another factor is the psychological effects of dividing your
desktop in two. Web-design on one, the final web site on the other for
example.

And another aspect - health. Programmers sit all day with the head in
the same position, looking at something in the same distance all the
time. This is very irregular, we are made for moving ours heads all the
time, and alternately look at objects at various distances all the time.

Two monitors are supposed to be a remedial action to this.
