A couple of major things to check are..

/3gb on your startup of windows
disable AV running on your vm guest directory.

Cool, I'll check them out when I get a chance to try Server again. For
now, I'm swamped with many other important things so will have to slum
it a bit with VMPlayer.

You could download the trial and see how that performs. :)
