But even outside of a VM, my video speed on Windows Server 2003 isn't
great. I think my host is to blame more than the VM.

Another thing you can try is to disable the following under performance
options in XP.

Fade or slide menus into view
Fade or slide tooltips into view
Fade out menu items after clicking
Slide open combo boxes
Slide taskbar items

It does not change the look and feel but makes a major difference in
speed especially the menu fading.
