It seems that "professional" tends to mean having only two or three colors
in the design itself.

There is a difference between Professional Website with many colors:
http://www.devexpress.com/
http://www.componentone.com/
http://www.telerik.com/
And "another website" that works in a couple browsers, but not the
other (extremely popular) ones:
http://www.codegear.com/
It isn't how many colors they have, it's the combination they chose -
nonergonomic choices, IMO.
Any beginner-level Web Design books tells you to avoid these things.
Typing in CodeGear's web address does not equate to "Enter the Matrix",
AFAIK.
So excuse me while I disagree.
