"Embedded" usually means programs that run on anything that isn't a PC,
or obviously a computer-- e.g. set-top-boxes, mobile phones, washing
machines, network devices, cars, etc.

Linux is increasingly often used as an embedded OS these days, but there
are many others.

i want to choose an open-source project to work on for free( for
experience).

You can have a look at http://savannah.gnu.org, there's a "help wanted"
section. You might find something you can contribute to there.

Can't really comment on career opportunities, although games should be
good for that.
