I've already thought about using a basic forum, but those are not private
- others can read what's being said and done, and the project is to
remain private until completion.

Sourceforge has also been mentioned - but I don't know if it's possible
to close a project there as well.

So basically what I need is the following:
- a website where several people can maintain documents, code, etc...
- a means of closing off said site to people who are not part of the
project

I figure there should be at least some people here who've had the same
experience in the past. If so, what did you use, and can you recommend
it?

Otherwise, what would you recommend?

Sourceforge should provide you with everthing you need including
version control. You will have to submit your project idea and have it
approved before they will provide you with the hosting and disk space
you need but that is painless. Once approved you can limit what is
visible to the public and add members to the project who can access
the hidden information. You can have private discussion threads as
well as store all documantation and code privately. Eventually you
will need to release the code under some public lisence that you will
pick up front.
