Sourceforge should provide you with everthing you need including
version control. You will have to submit your project idea and have it
approved before they will provide you with the hosting and disk space
you need but that is painless. Once approved you can limit what is
visible to the public and add members to the project who can access
the hidden information. You can have private discussion threads as
well as store all documantation and code privately. Eventually you
will need to release the code under some public lisence that you will
pick up front.

Which has two big disadvantages:
1. the main idea will be publicly available (but that's not the biggest
drawback)

This will be true when you are done anyway.

2. the code needs to be released when done - which is not going to happen.
This may be a hobby project, but it's not open source.

If it is truely a hobby project why can it not be done open source?

If these are really concerns of yours you are probably going to have
to host it yourself or pay someone else to host it.
