php security - safe mode and symlinks

I have a Sarge install of Squirrelmail, and it symlinks the etc
directory to /etc/squirrelmail

For security, we would like to run this under safe mode.

Can we ask php to follow symlinks? (just for this website?)
If not, how can I ask php to allow more than one safe path for this
website?

Thanks

.
