Do these gateways get paid?  I can send a text message to phonenumber@xxxxxxxxx using sendmail. So it appears Verizon is just charging my phone's account.

As is the case with everything telecom someone is going to make money off of it. The subscriber pays for sending and receiving texts with all carriers, if not explicitly as part of their monthly plan. Gateways are but one "hop" in the message chain.
